Easy, low-fat, and delicious!
1 lb chicken, cooked and shredded
2 cans chicken broth or 28 oz
1/2 C uncooked rice
1 C salsa (any kind)
1 t cumin
1 can corn
1 T chopped cilantro
2 T lime juice
tortilla chips
Combine all ingredients except the chips in a soup pot. Bring to a boil then reduce to a simmer. Simmer uncovered for 45 mins. Top with chips.
